Spencer’s 23 birthday is today! He is a lover of cakes, so I decided to make a good ol’ confetti cake, home style! Everything was homemade, so I felt pretty wifey. Enjoy!
Keep in mind, this is the type of cake you can only have a small slice of, it is very rich in flavor!
Note: I am not good at visual presentation when cooking.
Don’t forget to lick these puppies!
Cake Ingredients:
2 cups flour
1 1/3 cups sugar
3 tsp baking powder
1 tsp salt
¾ cup vegetable shortening
1 ¼ cups milk
1 Tbsp vanilla extract
3 egg whites
½ cup rainbow sprinkles
Directions:
- Preheat oven to 350°
- Grease 2, 8″ cake pans, line bottom of pans with parchment paper and grease again. Lightly dust with flour. Set aside.
- In bowl of stand mixer combine flour, sugar, baking powder and salt. Add in shortening and beat over medium speed until mixture is combined. Add in both milk and extract. Beat for 2 minutes on medium speed.
- Finally add in egg whites and continue beating until very smooth, 1-2 more minutes.
- Stir in sprinkles.
- Divide batter evenly and pour batter into prepared pans. Bake for 20-25 minutes until knife comes out clean.
Once the cake has cooled, take both pans and flip them over so the cake comes out. spread some frosting in the middle, then place one of the layers right side up on top of the other.
Poke holes in the cake using a wooden spoon handle. Pour 1/2 a can of sweetened condensed milk in the holes. Add Frosting!
Frosting Ingredients:
7 oz marshmallow fluff
3/4 C softened butter
3/4 C powdered sugar
1/2 teaspoon vanilla
Just mix, and spread!
Alright, I’l be the first to admit my cake doesn’t appear appealing. For some reason I lack on the baking visual presentation. But the cake was so good!
